Really Good Leftovers

Just a quick post to share my "leftovers" recipe. For Christmas we had ham, wild rice, baby carrots (cold as a relish), butter (of course), and half and half for coffee. So this weekend it's - -

Jill's Wild Rice Soup

Serves 6


6 tablespoons Butter
1 tablespoon Minced onion
1/2 cup Flour (or 1/4 C if you don't want it so thick)
3 cups Chicken broth
2 cups Wild Rice, cooked
1/3 cup Ham, minced
1/3 cup Carrots, finely grated
3 tablespoons Slivered almonds, chopped
1/2 teaspoon Salt
1 cup Half and half
1/2 cup Grated cheese
Parsley, snipped


Melt butter in saucepan; saute onion until tender.
Blend in flour; gradually add broth. Cook, stirring constantly, until mixture comes to a boil. Boil 1 minute.
Stir in rice, ham, carrots, almonds, & salt. Simmer 5 minutes or until rice and ham are heated. Blend in half & half and cheese. Heat to serving temperature. Garnish with parsley or chives.

Perfect. I do believe I have all the ingredients - AND - Minnesota Wild Rice!
